Gran Deposito Aceto Balsamico di Giuseppe Giusti by Caroline Wieler



Today, we visited Gran Deposito Aceto Balsamico di Giuseppe Giusti located in Modena, otherwise known as the Italian Food Valley.

This company has been directed by the Giusti family since 1605, passing through 17 generations thus far. In 1836, Giuseppe Giusti developed and presented his own “golden rules” for creating the “perfect balsamic vinegar”, and in 1929 his hard work paid off as they were named the official supplier of the King of Italy. Years later, in 1990, the company opened their doors in Modena for all food lovers to enjoy, allowing us to enjoy our trip there today!

Giuseppe Giusti determined that there are three elements that determine the quality of balsamic vinegar produced. First, the choice of grapes and the cooking system used. Second, the quality of the containers. The casks are believed to be the most crucial aspect of creating exceptional balsamic vinegar: the older the cask, the better the balsamic vinegar produced. The third element is time… a lot of time. Traditionally, one generation prepares the balsamic vinegar for the next generation. Experience in the mastery of all of these elements is key in creating a “master vinegar maker.”

The Giusti family now prides themselves in their company values stemming from the elements mentioned previously. Their values are ethics, excellence, people, and sustainability. The on-site museum includes objects and documents from generations past including their A3 barrel which won a gold medal from the Italian royal family in 1861. In addition to the impressive museum of artifacts, Gran Deposito Aceto Balsamico di Giuseppe Giusti houses 600 different casks dating back to the 18th century. These casks give rise to around 12 different categories of balsamic including glazes, truffle, fig, and raspberry balsamic, and a historical collection, among many others. Today, we had the privilege of tasting some of this award winning balsamic, and definitely enjoyed!
